Nutmeg's Nutty Biscnuts

These strange times have got Nutmeg baking.....really original I know 🙃 I made these little babies a couple of weeks ago, they are long gone, and we are having withdrawal symptoms! Yes, yes ok. I will share the recipe with you. And yes they are gluten, dairy and refined sugar free...but fun free? Never.

Nutmeg’s Nutty Biscnuts

1 cup rolled oats
1/4 cup coconut flakes
1/4 chopped mixed nuts
1 tablespoon ground flaxseed
1 1/2 tablespoons raw honey
1 1/2 tablespoons peanut butter (or nut butter of your choice)
2 dates, chopped into small pieces
1 tablespoon of coconut oil, melted
1 tsp vanilla extract
1/2 tsp baking powder
Pinch of salt
Optional; choc chips? Goji berries? Cinnamon? Nutmeg? Cranberries? Sure! Chuck in whatever you want!


Method: Preheat oven to 160 degrees. Combine all dry ingredients in a bowl. Add the remaining ingredients. Mix everything together in a bowl until mixed to the top standard of mixing. Roll into balls with hands, flatten slightly and place into the oven for approx. 25 mins or until golden brown.

Note: This recipe made 8 humble little biscnuts.
