Nutmeg's Oat Biccies

Recipe time! So I made these bad boys a couple of days ago and they are almost gone! Note to self: make double the recipe, every time.

Kind of Anzac biscuit-ish, followed a vague recipe but like I normally do, added and subtracted stuff depending on what I have at home. and what I felt like devouring at the time.

Nutmeg’s Oat Biccies

Ingredients:⁠

4 tbsp olive oil⁠

4 tbsp honey⁠ or maple syrup

1 1/4 cup almond meal⁠

1 cup rolled oats⁠

1 tsp baking powder⁠

1 tsp cinnamon⁠

4 chopped dates (could totally sub for choc chips!)⁠

2 tbsp chopped nuts of your choice⁠ (I like to use walnuts)

1-2 tbsp nut butter (I used peanut)⁠

Method: Mix all ingredients together, roll into balls + flatten, place on baking tray, and cook for approx. 15 minutes at 180 degrees (or until deliciously golden).⁠

This quantity made 10 cookies for us. Will most likely double the recipe next time! These make such an excellent snack for the whole fam and are high in protein + good fats!
